As an educator, homemaker, best-selling cookbook author, grocery executive, community leader and mother to two lifetime athletes Jackie Legg has never had a boring day. If she isn’t working or volunteering she is cheering on a team, packing a tailgate or looking for a game to watch!
As an undergraduate at William and Mary, Jackie was recruited in 1957 by a professor to work for Colonial Williamsburg in research, as a costumed building hostess and tour guide for school groups. Colonial Williamsburg’s detailed research inspired Jackie to study at the Institute of Early American History and do independent research which led to becoming an amateur genealogist. Jackie is currently a member of DAR and Colonial Dames of America. Following graduation, Jackie married her college sweetheart, began her 24 year teaching career and her alumni support and board memberships.
At age 50 Jackie accepted an offer to join the food business and become a pioneer in the developing world of prepared foods and solution shopping. An entire unknown business enveloped her leading to a new career in developing differentiated brands, creating menu-driven store designs, judging national food competitions and consulting internationally.
Jackie has lived, taught and worshipped for 60 years in the same historic community of Greater Hilton Village in Newport News, Virginia. Her leadership in this proud waterfront neighborhood helped with the formation of “Friends of the James River at Hilton Beach” as the residents worked with city leaders on a system to clean their portion of the James River as it travels to the Chesapeake Bay.
Jackie takes great pride in her grandson Spencer Legg and the empowering story he willingly shares with other Type 1’s.

Kevin Simmons
Advisory Committee
While growing up as the youngest of seven children in Connecticut, sports and particularly basketball played an important part in Kevin’s life. After college, he began working full-time in the non-profit sector, primarily in community centers and Boys and Girls Clubs. That work combined with coaching and then officiating high school basketball kept him more than busy. In 2008 Kevin’s daughter was diagnosed with type 1 diabetes (T1D). A move to South Carolina in 2015 allowed him to combine his passion for non-profit management with T1D, and he assumed the position of Executive Director for the JDRF Palmetto Chapter. Working as the JDRF Market Director in South Carolina since 2020, he continues to work tirelessly with volunteers, donors, families, foundations, and businesses to promote awareness of T1D and its signs and symptoms while also raising funds to drive research towards cures of type 1.
